Easy appetizer
Remove rind from top of cheese, cutting to within 1/2 inch of outside edges. Place on an oven-safe dish. Combine pecans, Kahlua and brown sugar. Spread over top of cheese. Bake at 350 degrees for 3-5 minutes, or just until soft. Serve immediately with apple slices or gingersnaps.
Note: To make ahead, assemble and chill for up to 4 hours. Let stand at room temperature 10-15 minutes before baking. You can also slice apples ahead and chill with orange or pineapple juice to prevent browning.
