Original recipe makes 1
3 eaEggs
1 cupVegetable oil
1 cupSugar
1 cupBrown sugar
2 cupsZucchini; grated (remove rind)
2 tablespoonVanilla
3 cupsFlour
1 teaspoonBaking soda
1 teaspoonSalt
2 teaspoonCinnamon
1/4 teaspoonBaking Powder
1/2 cupNuts; chopped

The Best Zucchini Bread Preparation

1. Mix flour, baking soda, salt, cinnamon and baking powder together.

2. Beat eggs with mixer until lght and foamy, add oil, sugar, vanilla and zucchini.

3. Add to flourmixture and then add nuts. Mix well (with beather on high.)

3. Bake in greased loaf pan at 350? for 1 hour. Take out of pan and cool on rack. Slice, serve warm or cool.

Notes

This bread freezes very well, so you can make a lot ahead of time to have throughout the winter.

I wasn't fond of this recipe--not enough flavor for my taste. Also, I believe there's an error: it think it makes two loaves, not one. I only used one loaf pan as directed and ended up with a huge, extremely dense loaf that took twice as long to bake as the recipe states. I immediately made more zucchini bread with a different recipe to compare (trying to find my favorite recipe) and it made the same amount of batter, but that recipe directed me to divide it between two loaf pans. This recipe could be improved, in my opinion, by adding nutmeg or additional spices. It was just a bit bland for my taste.
