1. Mix flour, baking soda, salt, cinnamon and baking powder together, set aside.
2. Beat eggs with mixer on high until light and foamy, add oil, sugar, vanilla, and beat until creamy. Then add zucchini.
3. Add to flour mixture and then add nuts. Mix well (with beater on high).
3. Bake in greased loaf pan at 325 for 1 hour. Take out of pan and cool on rack. Slice, serve warm or cool.
This bread freezes very well, so you can make a lot ahead of time to have throughout the winter.
