This is a great, fresh, colorful summer salsa! It goes well with corn chips, especially the 'scoops' kind because you can pick up tons of salsa! It's also great to eat on it's own.
Chop peppers and onions (can do as fine or as chunky as you want). Add rinsed and drained corn and beans. Mix sugar, vinegar and oil in small pan; stir occasionally and bring to boil. Remove from heat and cool. Pour over bean/pepper mixture, stir and chill. Enjoy!!
(Note: For a less soupy salsa, I cut the sauce (sugar, vinegar, and oil) in half.)
