Ingredients

3 lb butternut squash; peeled and deseeded
4 tablespoons Butter
1 cup Reduced-fat sour cream
1/4 cup onions; finely chopped
1/4 cup parmesan cheese; shredded
2 Eggs; beaten
1/2 teaspoon Salt
1/4 teaspoon ground allspice; (up to 1/2 teaspoon)
1/4 teaspoon Pepper
1/2 cup buttery crackers; crushed (ie Ritz)

Preparation

Preheat oven to 350. Grease/spray a casserole dish; set aside.

Cut the peeled, desseded squash into 2" pieces.

Steam/boil the squash or about 15 minutes or until soft.

Drain and shake off all excess water.

Return drained squash to pot and mash with the butter, rf sour cream, onion, and parm cheese.

Briskly stir in the beaten eggs.

Add the salt, allspice, and pepper. Stir well.

Pour mixture into the prepared casserole dish. Sprinkle with the crushed crackers.

Bake at 350 for 45 minutes.

Added 1 lb of ground beef and turkey and 1 1/2 lbs of cheese amazing. Ty for base recipe.

I roasted the squash first. Basted with melted butter,salt ,pepper and fresh nutmeg. Didn't have crackers so i used cherrios ran through food processor.

Very easy to make, sets up nice when done, almost like a souffle. I added grated ginger and nutmeg, great flavor. Will be adding this to the family recipe box.

Most of the prep time was in steaming the squash and baking the dish. I forget the onions and substituted a biscuit crust for the crumb topping (had no crackers).
