Beer and Beef Chili
Football Chili"This was an amazing recipe and if you are good at adding your own little twist... It makes it that much better. I put two different kinds of kidney beans and used a more chiili style tomatoes with green chillis. I also used it to make frito pies and my kids loved it. Very good. |1 1/2 cupsred onion; chopped|
|1 cupred bell pepper; chopped|
|8 ouncesground beef,; lean|
|2 clovesgarlic; minced|
|1 1/2 tablespoonsChili powder|
|2 teaspoonsGround cumin|
|1/2 teaspoonDried Oregano|
|14 1/2 ouncediced tomatoes; no-salt aded, un-drained|
|1 19-oz canred kidney beans; `drained|
|1 14-oz canlow-sodium beef broth|
|1 mediumgreen pepper,; diced|
|12 ouncesbeer; such as Budweiser|
|1 tablespoonYellow cornmeal|
|1 tablespoonFresh lime juice|
Beer and Beef Chili Preparation
Combine first 4 ingredients in a large Dutch oven over medium-high heat. Cook 5 minutes or until beef is browned, stirring to crumble.
Stir in chili powder, cumin, sugar, and salt; cook 1 minute. Add oregano and next 5 ingredients (through beer) to pan; bring to a boil.
Reduce heat, and simmer 15 minutes. Stir in cornmeal; cook 5 minutes.
Stir in juice and serve.
Yield 4 servings (serving size: 1 1/2 cups)
