Football Chili
"This was an amazing recipe and if you are good at adding your own little twist... It makes it that much better. I put two different kinds of kidney beans and used a more chiili style tomatoes with green chillis. I also used it to make frito pies and my kids loved it. Very good. | 1 cupred bell pepper; chopped |
| 8 ouncesground beef,; lean |
| 2 clovesgarlic; minced |
| 1 1/2 tablespoonsChili powder |
| 2 teaspoonsGround cumin |
| 1 teaspoonSugar |
| 1/2 teaspoonSalt |
| 1/2 teaspoonDried Oregano |
| 14 1/2 ouncediced tomatoes; no-salt aded, un-drained |
| 1 19-oz canred kidney beans; `drained |
| 1 14-oz canlow-sodium beef broth |
| 1 mediumgreen pepper,; diced |
| 12 ouncesbeer; such as Budweiser |
| 1 tablespoonYellow cornmeal |
| 1 tablespoonFresh lime juice |
Beer and Beef Chili Preparation
Preparation
Combine first 4 ingredients in a large Dutch oven over medium-high heat. Cook 5 minutes or until beef is browned, stirring to crumble.
Stir in chili powder, cumin, sugar, and salt; cook 1 minute. Add oregano and next 5 ingredients (through beer) to pan; bring to a boil.
Reduce heat, and simmer 15 minutes. Stir in cornmeal; cook 5 minutes.
Stir in juice and serve.
Yield 4 servings (serving size: 1 1/2 cups)
