Chocolate Tart Recipe from Simon Hopkinson, time estimate is just a guess.
Pastry
Pastry dough must chill at least 1 hour. Combine sugar, egg yolks and butter in a bowl. Once combined blend in flour and work to a homogeneous paste. Chill.
Preheat oven to 350 degrees. Roll out dough thinly. Line an 8 inch tart pan with dough. Bake approximately 25 minutes until pale biscuit color but cooked through. Remove and increase heat to 375 degrees.
Filling
Put egg yolks, whole eggs and sugar in bowl and beat until thick and fluffy. Melt butter an chocolate together in a double boiler, stirring until smooth. Pour into the egg mixture while still warm. Beat together until combined then pour into pastry shell.
Return to oven for 5 minutes. Remove and cool. Serve with thick cream.
Love it. Not too time consuming or difficult.
