My husband doesn't care for cheesecake but since he loves coconut so much he also loves these bars!

Ingredients

1 (16.5 oz) package Chocolate chip cookie dough
8 ounce Cream cheese; softened
1 Egg
1/2 cup Coconut; flaked
1/2 cup Sugar

PREP TIME: 10 min READY IN: 2 hours 20 min

Preheat oven to 350 F.

In a small bowl, combine sugar, egg and cream cheese; beat until smooth. Stir in the coconut.

Remove half of the cookie dough from wrapper and press half of the dough in the bottom of a 8" or 9" square pan. Spread the cream cheese mixture over dough. Combine and sprinkle remaining half of cookie dough over cream cheese mixture.

Bake at 350 F. for 35-40 minutes or until golden brown and firm to the touch. Cool for 30 minutes.

Refrigerate at least 1 hour or until chilled. Cut into bars and serve chilled.

Notes

The only part I dislike is they don't last very long and I have to make more!

Make sure you really do a good job greasing the pan with butter or spray or it will stick. Also def will use double the cookie dough next time.

Used a dry cookie mix I had in the pantry and toasted the coconut. Baked in a loaf pan for taller bars and cut after refrigerating over night. Very good but very sweet

This is an awesome dessert! I missed the nonstick spray which I find a must before cookie dough goes down but I give this a 10, hands down! Thanks!
