On a small plate, set aside flour for coating. In a medium saucepan, saute the onion, garlic, oregano, and hot pepper in oil on a medium-high heat until the onions are translucent. Add the peppers and saute another 2 minutes, until the pepper is tender. Set aside. In a large bowl, mash the black beans with a potato masher or fork. Stir in the vegetables (including corn), bread crumbs, cumin, salt, chili powder, and parsley. Mix well. Divide into 4-6 patties. Lay each patty in flour, coating each side. Cook in the warm pan on med-high with additional oil (about 1 Tbl.) for 5-10 mins on each side or until browned on boht sides. Can top with cheese of your choice.

dakotarussell 3 months agoGreat veggie burger recipe! It holds together nicely in the pan, and it's got a lot of flavor and texture to it. Ive tried a few other recipes, but this is my go-to from here on out.

adam6806 3 years agoI had to make this with great morthern beans because thats all I had, and I also forgot corn at the store so we went without those as well. I used an orange bell pepper instead of a red one. All in all it was very good. It is so much better than the frozen veggie burgers you can buy. Will definitely be making this again.
stefenos 3 years agoused as a base for my own version. the proportions are on target, which enabled me to improvise with seasoning and flavors. i formed patties and baked in 350 degree oven. i omitted the final flour dredge as well.
