As creamy as the real thing, cauliflower provides a yummy stand-in for mashed potatoes, and even grits!
"Great recipe and easy to modify to taste. Used low fat cream cheese and a couple splashes of chicken stock and it came out perfect. I even got my picky 5 year old to try it and declare she liked it! | 1 headcauliflower; (or two small heads) |
| 4 tablespoonsButter |
| 4 ozcream cheese; (can substitute Neufchatel cheese) |
| 0.5 cuplight cream or half-and-half |
| 1 salt and pepper; to taste |
| Cheese; garlic is optional |
Fauxtatoes/grits- mashed cauliflower Preparation
Steam or boil cauliflower until very soft (steaming retains more nutrients), about 10 minutes. Once soft, mash cauliflower with a potato masher or ricer, just like with mashed potatoes. Stir in butter, cream cheese, and cream; continue stirring over low heat, adding salt and pepper to taste. Add other mix-ins as you would with mashed potatoes. Leave consistency rough for grits, or whip/blend for a finer mashed consistency.
