This is a great easy recipe for that quick breakfast and it tastes so good too! I cut the recipe in 1/2 since there are only 2 of us.

"I made this recipe as-is. It was really delicious! I will definitely make this dish again, but will add chopped sweet onion and maybe use a blend of shredded Mexican cheeses instead of Velveeta. Another idea is to use chopped-up turkey link-sausage."

2 cupfrozen hash brown potatoes; shredded
0.5 lb.pork sausage; (8 oz) cooked & browned
1 10-oz candiced tomatoes with green chilies; drained
0.5 lb.VELVEETA cheese; (8 oz) cut-up
6 Eggs

Hearty Breakfast Skillet with Velveeta Preparation

PREP TIME: 5 min TOTAL TIME: 45 min

Preheat oven to 375 degrees F. In a large skillet, sprayed with nonstick cooking spray brown sausage over medium heat; drain. Add potatoes and tomatoes; mix well. Cook for 5 minutes and stir.

Transfer to a 9-inch pie plate coated with cooking spray and then top with VELVEETA.

In a medium bowl, beat the eggs with 2 Tbsp. of water until well blended. Pour evenly over the ingredients in the pie plate.

Bake 20 to 25 minutes or until egg mixture is set in the center and the VELVEETA is melted. Remove from the oven and let stand for about 5 minutes.

Cut into wedges and serve hot.

VARIATION: For a meatless option, prepare as directed but substitute with 1/2 cup of chopped onion for the browned sausage and add to the skillet with the potatoes and tomatoes.

I made this with breakfast sausage and ham since that is what needed to be used up. Substituted a shredded Mexican cheese blend for velveeta. It was great! Would substitute a smoked sausage and add onions next time. Lots of possibilities!

Used the basic ingredients and preparation. Used cheddar/monterrey jack cheeses. Added onions, green peppers. Served with cornbread (also with a little cheese, onions, peppers) which baked along with it. Tasty! Good addition to breakfast/brunch favorites.

I adjusted this recipe to ingredients I had on hand. I lined casserole dish with ore Ida crispy crowns & since I only had diced tomatoes without green chilis, I added diced jalepenos. I also used hot sausage. My family likes spicy!

If you choose to cook on the stove, just cover the skillet and continue to cook on medium-low heat for 10 to 15 minutes or until egg mixture is set in the center and the VELVEETA is melted. Uncover; let stand 5 minutes before cutting to serve. [I posted this recipe.]
