Warm, crispy potatoes coated with a bright, creamy herb dressing is the perfect compliment to any meal.
Preheat oven to 400 degrees. Toss potatoes with 1 tbsp salt and olive oil to evenly coat. Roast potatoes for 45 minutes, stirring every 15 minutes for even browning. Set aside.
For the dressing: place the cilantro, green onions, mayonnaise, sour cream, vinegar, and mustard in the food processor. Process until smooth.
Combine potatoes and dressing, coating evenly. Reseason with salt and pepper to taste.
*Regular size Yukon gold potatoes can be substituted. Simply cut them to a 1-1 1/2" dice. [I posted this recipe.]
