Leftover mashed potatoes and leftover broccoli mixed with cheese, breaded and fried.
Mix mashed potatoes, broccoli and cheddar cheese together in a bowl. Form the mixture into 8 patties.
In a small shallow bowl, beat the egg with the water. In another shallow bowl, mix the breadcrumbs with the Parmesan cheese. Dip each potato patty in the egg and then the breadcrumb mixture. When all the patties are coated with crumbs, set in refrigerator for 4 hours or overnight for the crumb coating to dry.
About 10 minutes before serving, heat the vegetable oil in a large skillet. Place the patties in the skillet and brown on both sides until golden, about 5-7 minutes.
Serve hot.
