Garlic - fragrant cheese melts inside the rolled crepes that nestle in a hearty meat sauce for this relatively quick version of cannelloni.
Meat sauce:
Cook ground beef, stirring, until it loses all pink color.
Add:
1 med. onion, finely chopped
1 cup lightly packed, chopped parsley,
1 carrot, finely chopped
Cook and stir until carrot is slightly soft.
Add can of tomatoes, chicken broth, tomato paste and basil.
Boil rapidly until reduced to 4 ? cups. Stir to prevent sticking.
Use hot or cold; cover if chilled.
Garlic Parsley:
Melt 1? T of butter in a pan over med. heat. Add 1 T minced or pressed garlic and 2 cups lightly packed parsley. cook, stirring until parsley turns a bright green.

Crepes:
In a large bowl combine flour and eggs and beat until smooth. Stir in milk.
Place a 6 -7 inch pan over med. heat.
When pan is hot add ? t butter and swirl to coat surface. Pour in 1 ? T of batter .
If the heat is correct the crepe sets at once and tiny bubbles appear.
Spread about ? of the meat mixture over the bottom of a 12 x 15 inch baking dish.
Divide garlic parsley mixture equally among crepes. Lay a cheese stick in crepe and roll. Place rolled crepes, seem side sown, in dish and cover with remaining sauce. Sprinkle with Parmesian cheese.
you can cover and chill this dish for up to 24 hours before baking.
Bake, uncovered in a 450? oven for 12 - 15 minutes or until sauce is bubbling.
