Sugar-covered cranberries - perfect for Christmas parties
Heat water and sugar until sugar has thoroughly dissolved, but water isn't boiling. (Boiling water will make the berries pop, and you want them to stay intact.) Put berries in a glass dish and pour sugar syrup over. Cool, cover and refrigerate overnight. Drain cranberries in a colander, saving syrup for another purpose if desired. Pour superfine sugar all over a cookie sheet and gently roll berries in sugar. Let them sit at room temperature until the berries are dry, then refrigerate. The sugar coating makes a crisp shell, and the berries look like snow-covered holly berries. Yummy!
