Spaghetti Squash Surprise

Ready in 45 minutes

This is a great Meal, Side Dish. If you are Vegan, omit the Cheese and add a handful of toasted Pine Nuts or Pecans, chopped.

"Ok folks, I made this again and this time instead of Sweet Potatoe I used Butternut Squash. Same quantity, but boiled it til just about fork tender. Then seasoned it with the 5 spice and a tiny bit of Splenda. Still comes out amazing !!!"

Ingredients

1 large Spaghetti Squash; 3-4 lbs
1 1.5-lb Sweet Potato; Skin on, cut into 1/2 inch cubes
2 large Shallots; 1/2 inch cut
Butter-Flavored Crisco Spray
1/4 teaspoon Pepper
1 teaspoon Garlic powder
1/4 teaspoon Five spices powder
1/2 cup Asiago Cheese; Grated
1/2 cup Romano Cheese; Grated
1 16-oz jar Corn, Blackbean & Roasted Pepper Med. Salsa; (Marke
1/2 cup Water

Preparation

Preheat oven to 400 degrees.

Cut Spaghetti Squash in half. Seed, then spray with Butter Flavor Crisco. Sprinkle with Pepper and turn upside down on a baking sheet. Pour water into pan and bake 35-40 minutes until skin is bubbled and Squash is fork-tender.

On a seperate sheet pan, spray with Butter Flavor Crisco. Place Shallots and Sweet Potato on baking sheet. Sprinkle with Five Spice and place on rack in oven with Squash and bake for the same time.

In a large bowl, shred the Spaghetti Squash and add the Shallots and Sweet Potatos. Combine all the other ingredients. Toss and Serve.
