Suggest a better descriptionSeason the chicken generously with salt and pepper. In a large frying pan over medium-high heat, warm the olive oil. Working in batches if necessary, add the chicken and cook, turning frequently, until browned, about 10 minutes.
Pour off all but 1 tablespoon of the fat in the pan. Add the onion and saute over medium-high heat until softened, about 5 minutes. Add the garlic and cook for 1 minute. Add the chiles, wine, tomatoes, almonds, and raisins and bring to a simmer. Transfer the chile mixture to a food processor or blender. Add the peppercorns, cinnamon, sesame seeds and coriander seeds. Process or blend until a thick puree forms.
Place the frying pan over medium-high heat and melt the butter. Add the puree and cook until bubbling, about 2 minutes. Slowly pour in the broth. Add the chocolate and stir until melted.
OVEN: Preheat the oven to 350F (180?C) Transfer the chicken to a large Dutch oven. Pour in the chocolate mixture. Cover and cook in the oven until the chicken is tender and opaque throughout, about 45 minutes.
SLOW COOKER: Transfer the chicken to a slow cooker. Pour in the chocolate mixture. Cover and cook until the chicken is tender and opaque throughout, 3 hours on the low heat setting.
Transfer the chicken to a warmed platter, top with the mole, and serve at once.
Serve with Spanish rice and warmed corn tortillas to soak up the sauce.
