Old fashioned chili made with ingredients you probably already have in your kitchen. An old south Texas recipe that has been passed down for several generations. For vegetarians substitute a one pound package of the soy burgers (crumbled). No one will know the difference!

Ingredients

1 pound lean ground beef or
1 pound stew meat or
1 pound crumbled soy burgers
1 medium Onion; diced
1 medium bell pepper; diced
1 sprig cilantro
1 can ranch style beans (optional); 15 oz
1 can Rotel diced tomatoes and green chili peppers; 10 oz
1 can tomato sauce; 15 oz
1 teaspoon cider or balsamic vinegar (more or less)
2 teaspoons chili powder (or to taste)
2 cups water; or more as needed
1 tablespoon cooking oil
0.5 teaspoon each salt and pepper (or to taste)

Preparation

In a large saucepan using medium heat, combine the oil, onions, bell pepper and the meat of your choice and cook until the meat is brown.

Stir in the beans (optional for Texans who mostly don't like beans in their chili), Rotel, tomato sauce, vinegar, chili powder, water, salt and pepper. Reduce the heat and simmer for 2 hours stirring every 15 minutes. Add more water for your desired consistency.

The vinegar is key to this great tasting recipe. Vinegar is also great in stews. Long known as a 'secret' ingredient in many recipes. [I posted this recipe.]
