Almejas a la Marinera
1. Heat the olive oil in a large deep pan.
2. Add the onion and paprika and cook gently until soft but not browned.
3. Add the passata, bay leaf, chilli flakes and white wine and simmer 1-2 mins.
4. Add the clams, cover and cook over a high heat, shaking the pan occassionally, for 3-4
minutes.
5. Stir in the beurre manie and simmer for 1 minute until the sauce has thickened slightly.
6. Stir in the parsley, adjust the seasoning.
7. Serve with crusty bread.
