Gently fry the leeks in oil until soft add Broccoli and potatoes cook for abot 3 minutes add stock bring to the boil and cook for 20 minutes until potoates are tender,using a blender or stick Blender.blend until smooth start adding light and creamy evaporated milk use as much or as little evaporated milk as you like
Serve with toast or bread rolls add a spoonful of sour cream or yogurt just before serving
full cream can be used if desired
