Preheat oven to 375 degrees. In a large mixing bowl; combine sugar, butter, egg yolk, and almond extract. Beat until mixture is light and fluffy (2-3 minutes). Continue beating mixture, gradually adding flour and cocoa until mixed well. Shape dough around the "surprise" ingredient(s) until completely hidden. Bake for 8 minutes, remove from oven and allow to cool for about 5 minutes.
Hint: These cookies are best eaten hot, but are still really good cooled.
Surprise Ingredients:
Drained Maraschino cherries (one per cookie)
Chocolate chips (about 5 per cookie)
M&M's (about 3 per cookie)
Hershey Kisses (one per cookie)
Almonds, pecans or walnuts (1 or 2 per cookie)

Joel began making these cookies at Christmas time in 1994, the year Sarah was born. They are quick, easy and can be adjusted to your particular taste in cookies. The cookie is similar to a brownie, but are round with a surprise ingredient in the middle.
