Scrambled masala eggs
1) Heat oil in a frying pan. Put in the onions and fry till golden brown.Add the whole green chillies, salt, turmeric and red chilly powder. Then add ginger and garlic pastes and fry for 1-2 minutes. Add the chopped green chillies, coriander, mint and well- beaten eggs and stir briskly. Fry and scramble dry the eggs.
This is really scrambled eggs, Hyderabadi style sans any Western influence though, it has a fine classy flavour and goes well with the paratha.
