Original recipe makes 6 Servings
| 6 ounceswhole-wheat penne |
| 2 teaspoonsolive oil |
| 2 garlic cloves; minced |
| 1/4 teaspooncrushed red pepper |
| 2 teaspoonslemon zest |
| 2 tablespoonslemon juice |
| 1/2 teaspoonsalt |
| 1/4 teaspoonblack pepper |
| 2 ouncesfresh mozzarella cheese; diced |
| 1 cupcherry tomatoes; halved |
| 1/2 cupchopped fresh basil |
Pasta Salad with Tomatoes and Mozzarella Preparation
1. cook the penne according to the package directions. omitting the salt if desired. drain and rinse under cold running water. Drain again.
2. to make the dressing, heat the oil in a small skillet over medium heat. add the garlic and red pepper and cook, stirring often until the garlic is golden, 2-3 minutes. transfer the oil mixture to a large bowl, stir in the lemon zest, lemon juice, salt and pepper. add the pasta, mozzarella, tomatoes, and basil, toss to coat.
