Steel cut oatmeal pancakes

Ready in 1 hour

This is a good way to use up leftover cooked steel cut oats. The texture of the inside of the pancakes is like a bowl of warm oatmeal.

"Used all the ingredients I had to use up. Perfect with jam or honey w/ bananas. I add cinnamon and walnuts. "

Notes

To make cooked steel cut oats, follow the directions on the package. To get a nice nutty flavor, toast the oats in a skillet before cooking. To reduce cooking time in the morning, mix oats & required amount of water the night before and bring to a boil. Turn off the stove, cover and leave out overnight. In the morning, you'll just need to bring to a boil again and it will be ready to serve.
