This is a good way to use up leftover cooked steel cut oats. The texture of the inside of the pancakes is like a bowl of warm oatmeal.
Mix together egg, milk, sugar & salt. Mix in oats, then flour. Oil a griddle and cook both sides over medium heat. Serve with maple syrup & fruit.
To make cooked steel cut oats, follow the directions on the package. To get a nice nutty flavor, toast the oats in a skillet before cooking. To reduce cooking time in the morning, mix oats & required amount of water the night before and bring to a boil. Turn off the stove, cover and leave out overnight. In the morning, you'll just need to bring to a boil again and it will be ready to serve.
