Heat 2 T oil in heavy skillet over med-high heat.
Sprinkle chicken with salt & pepper.
Working in batches cook chicken until brown (about 4 min)
Transfer chicken to platter.
Add onion, garlic and parsley to same skillet. Saute until onion is soft (about 4 mins)
Add pepper, tomatoes and wine and return chicken to skillet.
Cover, simmer over med-low heat 30 min.
Uncover, cook until chicken is tender and sauce is reduced (about 15 min)
