Easy to make and tastes great! This is typically lighter than traditional pasta in tomato sauce; I always make this with whole grain pasta for a healthier alternative. Goes great with chicken or pork.
Bring a pot of water to a boil and cook the pasta 9-10 minutes, or according to the cooking directions.
While pasta is cooking: In a large pan, add the Olive oil and bring to medium-low heat. Add the garlic and crushed red pepper, and cook until the oil begins to somewhat simmer and the garlic is browned. This is what flavors the oil, which is what will eventually become the "dressing" for the pasta and spinach. Add the onion, salt, and pepper, and cook until the onion starts to turn clear. At this point, add the spinach and bring the heat up to medium. When the spinach is cooked down, turn off the heat and add the pasta, tossing to combine.
Grate fresh Romano cheese over top of pasta if desired.
