Gyro Meat Sandwich Filling with Tzatziki (Satziki) Sauce

These savory meats are seasoned just right for a great pita sandwich! The cucumber sauce is spooned liberally on top, and may also may be served as a side dish to any lamb dish.

| 1/2 poundground beef |
| 1/2 poundground lamb |
| 1 tablespoonchopped fresh oregano; or 1 teaspoon dried |
| 1 teaspoonminced garlic |
| salt and freshly ground pepper to taste; to taste |
| -- Pita bread |
| -- slices of raw white onion |
| -- fresh parsley, optional |
| Tzatziki Sauce |
| 1 cupplain nonfat yogurt; made without gelatin |
| 1/2 teaspoonsalt |
| 1 cupfinely chopped cucumber; about 1 medium |
| 1 teaspoonminced garlic |
| 1/2 teaspoonwhite pepper |
| 1 dashsugar |
| 1 tablespoonwhite wine vinegar |
| 1 tablespoonolive oil |
Gyro Meat Sandwich Filling with Tzatziki (Satziki) Sauce Preparation
Combine all ingredients and cook immediately or place in the refrigerator for 1 to several hours. Cook in a large skillet until meat is no longer pink, Drain well. Serve wrapped in a pita with Tzatziki, slices of onion, and fresh parsley, if desired.
Makes 2 cups (8 one-quarter cup servings).
Tzatziki (Satziki) Sauce - Gyro Sauce
Place yogurt in a small colander lined with several layers of cheesecloth or coffee filters. Place colander over a small bowl into which whey will drain. Place colander and bowl in the refrigerator for approximately 2 hours. Discard whey. Combine thickened yogurt (yogurt "cheese") with remaining ingredients and refrigerate for several hours.
Makes 1 to 1 1/2 cups.
