A Japanese dish, crispy chicken and Nanban sauce. Delicious.
Sauce: Cut the Kombu kelp into thin strips. Cut the red chili in half, remove seeds and slice thinly into rings. Add water, kelp, vinegar, 1tbsp of soy, sugar and salt into a cold pot on the stove. Bring just to a boil and dump contents into medium glass bowl. Add the red pepper. Slice the onion in quart inch strips and separate layers. Cut the 1/2 carrot lengthwise into strips. Slice bell peppers in rings, avoid seeds. Heat small amount of oil in pan and add onion and carrot for about 1 1/2 mins until wilted. Add to sauce bowl with uncooked bell peppers.
Chicken: Quarter chicken thighs (you should have 8 pieces of chicken) and place into small bowl. Add the remainder of soy sauce and sake. Crush or grate the ginger to get juice, and add to chicken. Mix the chicken with these ingredients, until absorbed. Let sit for 10 mins. Pat chicken with paper towel to remove excess liquid. Place corn starch in plastic bag with chicken and shake to coat the chicken evenly. Heat 1 inch (enough for the chicken to float) of oil in a large skillet until 340(F) and add chicken. Keep chicken floating still for a few seconds, and then flip over. Deep fry the chicken for 5 minutes, turning chicken over every few seconds. Watch for burns! Once golden brown, drain excess oil from the chicken on paper towel and add the chicken pieces to the vinegar sauce while they're still hot. Coat briefly in the sauce, but serve quickly in order to keep the chicken crispy. Serve on a bed of butter lettuce leaves, sprinkle with toasted white sesame seeds and enjoy!
