A thearty Authentic Texan Chille Con Carne, thick with steak and carmelized onions.
Cut meat into 1-2 cm cubes, discard excess fat. Season with salt and pepper. Fry meat until well browned, drain and set aside.
Add onions to pan with chilli, paprika, cumin and muscovado and gently fry until golden and carmelized.
Return meat to the pan with the garlic, tomatoes and beef stock.
Reduce heat and simmer uncovered for 1 1/4 to 1 1/2 hours or until meat is very tender.
1/2 hour before end add kidney beans.
Check seasoning and serve.
Replace the powdered chilli with fresh chilli. You need to use your own judgement as how much to put in as chillies vary in strength. If it is too hot you can freeze it to tame the heat.
