When I moved from North Carolina I had a hard time finding a recipe for North Carolina style pulled pork rather than Kansas City or South Carolina (which is ketchup or bbq base whereas NC is vinegar based).
Pork :
-Simmer pork loin and ingredients in crockpot for 4-8 hours. Pull apart with fork once tender.
BBQ Sauce :
-Saute onion and combine with other ingredients. Simmer for about 20 minutes. (I then strain onions, but this is up to you)
Please note that I have a huge love for vinegar, so feel free to decrease the amounts of vinegar and increase the amount of water in this recipe if you do not have the same sentiment. :) The original recipe called for a full cup of vinegar, but I ended up cutting that in half and adding 1/2 cup water to substitute. I've also included a BBQ Sauce recipe that I always use with this pork - I think the spicy helps tone down the vinegar. (My favorite way to serve is as pulled pork sandwiches)
