1. Place chicken halves between 2 sheets of heavy-duty plastic wrap and pound to 1/4 inch thickness using a meat mallet or small heavy skillet. Sprinkle chicken with salt and pepper
2. Combine parsley and lemon rind in a small bowl; toss gently. Presshalf of parlsey mixture even into one side of the chicken breasts.
3. Heat a large nonstick skillet over medium-high heat. Add oil and butter to pan, and heat until butter melts. Add chicken, herb side down, and cook 4 to 5 minutes or until chicken begins
to brown. Sprinkle remaining parslet mixture on top and turn chicken. Cook 4 to 5 minutes or until done. 4 servings. 5 WW points per serving
