Boil chicken in large pot until done. Remove chicken and continue to boil broth. Mix flour and salt: add butter. Strain 2 cups of boiling broth. Pour over flour and butter mixture. (no need to blend butter and flour. Just pour broth directly over mixture) Mix until dough leaves sides of bowl. Generously flour board and roll out to 1/8" thickness using between a quarter and third of the dough at a time. Cut into 3' squares and drop into boiling broth. After all dumplings are submerged. Simmer for 15 to 20 minutes, stirring occasionally. Add chicken meat to dumplings and broth.
