"Finally made this tonight - pretty darn good, I did have to add a cup of heavy cream to thicken it up a bit. I also added a couple tablespoons of bacon grease to it for more flavor. Original recipe makes 10 Servings
5 poundsRusset potatoes; Diced 1/2 Inch Cubes
1 mediumYellow onion; Diced
10 clovesGarlic; Minced
64 ounceChicken Stock
16 ounceCream cheese; Softened
1 tablespoonKosher Salt
1 cupHeavy cream

Slow Cooker Houlihan's Potato Soup Preparation

1.) Add potatoes, onion, garlic, seasoning, and chicken stock to slow cooker.

2.) Cook on high for 6 hours or low for 10 hours.

3.) Add the softened cream cheese and puree soup with an immersion blender until the cheese is incorporated and about half the soup is blended. (Alternately you could remove half the soup and the cream cheese to an upright blender, then re-incorporate).

4.) Stir well, top with your choice of garnishes & enjoy!

Optional garnishes: crumbled bacon, shredded cheese, green onions

    Me too, finally had a chance to try this receipe. I personally didn't have to add anymore cream then the receipe suggested but I did add chopped up fried bacon to the mixture as well as the topping. Very garlicly for my taste but my wife loved it. Good enough to make it a favorite with 4 stars
