MIX cream cheese, onions, garlic and pepper until well blended. Shape into 6-inch log; wrap tightly in plastic wrap.
REFRIGERATE 30 min. or until firm. Roll in parsley until evenly coated on all sides.
SERVE as a spread with the crackers.

HOW TO PAN TOAST GARLIC: Pan toasting garlic is a great alternative to roasting whole heads of garlic. Place unpeeled cloves of garlic in small nonstick skillet; cook on medium-low heat until garlic cloves are fragrant and evenly browned on all sides, turning every 3 to 5 min. Remove from heat. Cool completely before peeling.
