Preheat the oven to 190C.
Peel, core and slice the apples and place them in a shallow baking dish.
Add the ginger, if using.
In a separate bowl, mix together the sugar, vinegar, water, lemon juice, rosemary and sultanas, if using, and sprinkle over the apples. Cut the butter up and place it around the top of the apples.
Season the chops with salt and pepper and place them on top of the apples. Bake covered on the middle shelf of the oven for 30-40 minutes, or until the chops are cooked through.
