This is the traditional recipe as transmitted from my mom who is from Britanny in France. It yields 2 dozens crêpes (counting 4 crêpes each per serving or per person) but feel free to increase the quantities as it can be easily preserved in the fridge and serve as snacks all week long!
Ideally, you need a "crêpe pan" which is a very flat pan with thin bezel and a long flat wooden "crêpe spatula". Alternatively, you can be moderately successful with the use of any frying pan or flat spatula.
To prepare the dough:
1. In a large bowl, add in the eggs, the sugar, the salt and the oil. Whisk until the sugar is melted and the mixture forms an homogeneous smooth texture with no grains of sugar left.
Slowly add the flour, little by little, the milk and the water all whilst working on the dough.
Filter in a sieve to remove any bits.
Let it cool for about an hour with a kitchen towel on top.
To cook the crêpes:
Heat up a crêpe pan (or use a frying pan as flat and with as little edges as possible) until it is very hot.
Stir the dough with a laddle, add a small bit of butter in the pan, dry the pan with a paper towel.
Pour a spoonful of dough and quickly shake the pan so that it covers the dough covers the whole surface of the pan.
Within the first seconds, start to separate the edges of the crêpe with a flat knife and detach the crêpe from the pan using a wooden flat spatula, add a small bit of butter and flip the crêpe to cook the other side.
It will take you probably a few tries until you get the hang of it but then you'll be pumping out crêpes in no time!
You can prepare the crêpes in advance and then reheat each one in the pan as you serve them to your guests. In that case, just heat up your pan on high heat, add a bit of butter to the pan, wipe with a paper towel and add your crêpe for a few seconds.
