Preheat oven to 225 degrees. In a medium size roasting pan, mix broth. Coat meat with apple cider vinegar and rub and place in broth. In a separate pan, insert chopped apple, white onion, brown sugar and honey. Cook on a medium flame until the contents begin to caramelize. Place on top of meat and cook at 225 degrees for about 5 hours. Remove from heat, let cool, and refrigerate overnight.
Preheat over to 325 degrees. Remove excess fat that rose to the top of the pan. Cook at this temp for about 2 hours. Lower heat to 200 degrees and continue cooking until ready to serve or when meat begins to absorb all liquid. The meat should begin to just fall apart at this point (no shredding required), but use spoon to break it apart.
Not completely necessary, but if you're looking for a more prominent BBQ flavor, add some Roasted BBQ Sauce (Sweet Baby Rays is my favorite). This will also give it that roasted flavor. I used about a half of a small bottle.
The meat may also be cooked over a period of two days in a crock pot on low heat (slow long cooking is key). If spicy isn't for you, remove the chili sauce and cayenne powder. May be served on fresh roll with or without coleslaw, or alone!
