Thai Chicken Coconut Soup.
Soup Preparation
1. In a large soup pot, bring the Coconut Milk and Chicken Broth to a boil.
2. Sear chicken in olive oil. Add chicken, ginger and jalapeno peppers and continue to boil for 2 minutes
3. Reduce heat to simmer
4. Add Lime Juice and optional Fish Sauce and Cayenne Pepper
5. Simmer for 20 minutes
Top with Garnish and server hot.
