A pretty basic key lime pie recipe, but it has meringue baked on top!
Preheat oven to 375?
To make crust, combine crumbs, sugar and butter. Press into a deep 9" pie pan. Bake for 10 minutes.
Put egg whites for meringue in refrigerator. In a large bowl, whisk together condensed milk and egg yolks. Gradually add lime juice. Pour pie mixture into crust. Bake for 8 minutes, remove and cool for 1 hour.
To make meringue, with an electric mixer on high, whip room temperature egg whites with cream of tartar, in a clean glass or stainless steel bowl, until stiff, glossy peaks form, then fold in sugar. Pile meringue in heaping spoonfuls over the pie, forming peaks with a spoon. MAKE SURE MERINGUE TOUCHES THE CRUST ALL THE WAY AROUND TO AVOID SHRINKAGE.
Bake at 325? for 20 minutes, until peaks are golden.
