A great fall recipe. The wonderful flavors of acorn squash, raisins and tangy orange juice.
Heat oven to 400F. Scrape out seeds in squash halves; place cut-side up in 13 x 9 x 2-inch pan. In small bowl, combine orange juice, raisins, nutmeg, salt and pepper; divide evenly among halves. Add 1 teaspoon margarine to each half. Fill pan with 1 inch of water; cover with foil. Bake at 400F. for 30 minutes. Uncover; continue baking 25 to 30 minutes or until squash is tender.
Microwave Directions:
Scrape out seeds in squash halves; place in 12 x 8-inch (2 quart) baking dish. Add orange juice mixture and margarine as above. Cover with plastic wrap. Microwave on HIGH for 12 to 15 minutes or until squash is tender, rotating 1/4 turn every 3 minutes.
