A wonderful holiday jello. The cubes can be adjusted for the season.
Prepare cherry and lime gelatin separately, dissolving each in 1 cup boiling water and adding 1/2 cup cold water to each. Pour each flavor into separate 8-inch square pans. Chill until firm, at least 3 hours or overnight.
Cut gelatin into 1/2-inch cubes. Reserve 1/2 cup cubes of each flavor for garnish.
Dissolve lemon gelatin in 3/4 cup boiling water; add eggnog and rum. Chill until slightly thickened. Blend in whipped topping. Fold in gelatin cubes.
Spoon mixture into 5-cup mold. Chill overnight or until firm. Unmold and garnish with reserved gelatin cubes.
