this is actually courtesy of Williams Sonoma but I change it up a little.
Season pork with salt & pepper and take out of fridge for 30 min. Brown on all sides in olive oil. Place in crockpot with all ingredients. Cook on high 4-5 hours until pork is tender & pulls apart with a fork. Cut/tear into smaller pieces.
The Williams Sonoma recipe says to put the parsley garlic & lemon on top of each bowl as a garnish instead of adding it to the crockpot. The first time I did not realize it & just threw all of it in the crockpot and it came out just fine.
I use Sauvignon Blanc for the wine. You can add other vegetables such as carrots if you wish. Depends on what is in your fridge!
