A GREAT new twist on an old holiday favorite. My version of the recipe from Pillsbury's "Best Christmas Recipes Ever" 2012.
(1) Heat oven to 350°F. Lightly spray 13x9-inch (3-quart) glass baking dish with cooking spray.
(2) In 3-quart heavy saucepan, make 1 1/2 cups of the white sauce recipe on the Wondra flour container (uses the butter, flour and milk listed above). Remove from heat; stir in buttermilk, dressing mix, salt and pepper.
(3) Meanwhile, in 3-quart saucepan, heat green beans and enough salted water to cover for boiling. Boil 4 to 6 minutes; drain.
(4) In large bowl, mix buttermilk sauce, peppers and 1/2 cup of the cheese: add green beans, tossing gently. Spoon into baking dish. In medium bowl, mix onions, bread crumbs, pecans and remaining 1/2 cup cheese; sprinkle over green bean mixture.
(5 ) Bake uncovered 25 to 30 minutes or until golden brown and bubbly.
If you don't have Wondra flour, you can make a white sauce by melting the butter over medium heat; stir in flour with wire whisk until smooth. Cook 1 minute, stirring constantly. Gradually stir in 1 1/2 cups milk; cook 3 to 4 minutes, stirring constantly, until thickened and bubbly.
If preferred, you can replace the fresh mini sweet peppers listed above with 1 cup of roasted red bell peppers chopped, drained (from 8-oz jar).
This dish can be made in a large casserole dish instead, but you will probably have to increase the time in the oven. Bake until bubbly and the cheese is melted.
