Remove stalks from mushrooms. Heat half the olive oil in a large skillet and sizzle the mushrooms for 3-4 minutes on each side until golden and cooked through. Add more oil if needed. Lift mushrooms out and drain on paper towel.
In same skillet and remaining olive oil. When hot, add garlic and onion and sauté for a few minute and then add spinach. Cook for 2-3 minute over high heat. Season lightly with salt and pepper to taste. If needed drain spinach mixture into large sieve to remove moisture.
On a lightly floured surface or on pastry paper, scatter tyme leaves. Roll out pastry to the thickness of a quarter. Using a saucer and a larger-size plate, cut out 4 circles that are about 1/4 inch wider than the mushroom caps. Then cut 4 more circles about 1/2 inch larger than the previous four. Re-roll pastry trimmings if needed.
Place the smaller circles of the pastry on a baking sheet. Top in the center of each circle a quarter of the spinach mixture making sure that the spinach is not wider than the mushroom caps. Place a slice of Stilton cheese on the top and top this with the mushroom cap. Finish off with another slice of Stilton cheese and thin top with larger pastry circle. Crimp pastry top and bottom together so it seals.
Before baking brush tops of Wellingtons with beaten egg.
Place in oven and bake for 35-40 minutes or until pastry is golden brown.
