In electic mixer bowl dissolve yeast in warm water. Add salt, olive oil, and 2 cups of flour. Attatch bowl and dough hook to mixer. Turn to speed 2 and mix about 1 minute. Continuing on speed 2, add remaing flour a half cup at a time, and mix about 1 1/2 minutes after each addition, or until dough starts to clean sides of bowl. Knead on speed 2 about 5 minutes longer.
Place dough in greased bowl, turning to grease top. Cover. Let rise in warm place, free from draft, about 1 hour, or until doubled in bulk.
To Assemble:
Punch down dough and divide into 4 equal pieces. Carefully stretch out dough to desired thickness. Layer in ingredients desired on half of the dough leaving about 1/4 inch clean around edge of dough for sealing. Carefully pull other side of dough over filling. Seal edges together thoroughly. Transfer to greased baking sheet. With sharp knife make 2-3 small slits through top layer of dough.
Egg Wash
In a small bowl whisk egg and 1 tablespoon of water till thoroughly combined; gently brush mixture over calzones.
Place in 425 degree oven and bake until golden brown.
For Garlic Butter Baste
Place butter, oregano, garlic, garlic salt, and parmesan into microwave safe dish. Place in microwave for 30-45 seconds or until melted. Mix well. With basting brush, brush tops and sides of calzone with mixture.
Let stand about 10 mintues before serving.
For the filling use amounts that you like.
