Grilled cheese with guacomole and bacon
Turn on stove and cook bacon. While that is cooking prepare guacamole. In a bowl, slice ripe avacado, some chopped onions, and lime juice. (Feel free to substitute your favorite guacamole recipe, this was fine for me)
Clean bacon pan and start assembling sandwich. Butter only the OUTSIDE of the bread. Place items in this order on the sandwich top to bottom

Bacon
Guacamole
American cheese
Bread
Butter
Turn stove to 6 or 3/5 power equivalent.
Place the sandwich on a skillet. You will hear the sizzle of the butter, then silence. Wait for the butter to cook off and not burn your bread, flip the sandwich and repeat. Make sure the cheese starts to melt and you are done.
Place on a cooling rack 1-2 min and serve.
I made the guacamole from scratch and the bacon cooked fresh. Also placing on a cooling rack directly after coming off the skillet is important for less sogginess before plating.
