All the yumminess of Bacon Alfredo Chicken in an easy pasta bake using frozen chicken breast.
Place frozen chicken breasts in greased baking dish. Top frozen chicken breasts with 2 tbs. olive oil and season to your liking with all the spices. Bake in a 350 degree oven for 45-60 mins or until meat thermometer reads 160 degrees, when done remove and let cool a bit. While chicken is baking make pasta according to package directions for al dente. In a sauté pan place onions, red peppers and mushrooms. Sauté veggies until slightly tender, add grated garlic and stir so it won't burn then add bacon and deglaze pan with white wine and simmer for a couple minutes. Cut slightly cooled chicken into bite size chucks or shred if you prefer. Combine chicken, sautéed veggies, Alfredo sauce, 1cup of mozzarella cheese, 1/2 cup parmesan cheese and drippings from baked chicken pan. Add salt and pepper to taste (watch out when adding salt. Bacon and cheeses add salt already). Pour mixture over pasta in a greased 9x13 baking dish and stir to combine. Top with remaining cheeses. Cover with foil. Bake at 350 for 30 mins then uncover and bake until bubbly and slightly browned. Can add other veggies or other types of cheeses if desired..the possibilities are endless.
