Preheat oven to 350F.
Boil cut up asparagus for 2 minutes. Cook prosciutto in non-stick frypan until crispy - remove from pan.
Soften 1 cup minced shallots in 2 tbsp oil. Mix asparagus with proscuitto, shallots, 8 eggs, parmesan and pepper. Cover and refrigerate overnight if you want to make ahead.
Bake at 350F for 40 - 45 minutes.
