Quinoa is a high protein grain with a very mild flavor. It can be found at most major supermarkets and in bulk at Whole Foods. This is ONDERFUL on a hot night!
In large bowl, stir together chili power, 2 tsp. garlic, lime zest,, 2 tsp. oil and 1/2 tsp. each
salt & pepper. Add chicken and toss to coat. and add to quinoa mixture. Add remaining
ingredients; toss to coat.
