Chickpeas and adzuki beans are a good source of soluble fiber, vegetarian protein and good fats. Research has shown that regular intake of legumes (beans and pulses) can help to lower cholesterol levels and the risk of heart attack, and may help inhibit the growth of cancerous cells.
Mushrooms, cumin, garlic, and lemon help to boost the immune system. Cumin and garlic have antiviral properties whilst lemon is rich in vitamin C, a powerful antioxidant for the immune system. TCM practitioners have used mushrooms for many years to support the immune system and fight cancerous cells. They are rich in antioxidants, which are believed to help mop up cell damage caused by free radicals.
Chilli not only adds extra flavour and warmth to the dish but it is also rich in vitamin C and is anti-carcinogenic and anti-bacterial.
Sweat onions, garlic, capsicums in a little stock for 3-4 minutes. Add spices, chickpeas, tomatoes and stock and simmer for 30 minutes.
Sauté the mushrooms in the olive oil and add to the stew together with the cashew puree.
Simmer for another 5 minutes and season to taste.
Serve with brown rice, millet or quinoa with avocado and yoghurt on the side.
Garnish with the crisp tortilla wedges and coriander sprigs.
