Mild-Flavored flounder rolls are topped with a tangy cheese sauce to make this attractive dish.
1. Sauté onion in butter until tender.
2. In bowl, mix onion, broccoli, thyme, 3 tablespoons of bread crumbs.
3. Sprinkle fillets with salt and pepper. Drizzle with lemon juice.
4. Divide mixture among fillets. roll up. place, seam-side sown, in a greased, shallow 1 1/2 quart baking dish. Bake at 350 F for 15 minutes.
5. Heat soup, half and half, sherry, pepper sauce, if used, and 1 cup cheese. pour over fish.
6. Combine remaining crumbs and cheese. distribute over fish rolls. sprinkle with paprika. bake for 20 minutes longer
7. To make rice, sauté onion in butter. Toss with rice and pimento.
8. Garnish fish and dill
